Ingredients
  

Cake Base

  • 1 box yellow cake mix
  • 3 large eggs Use room temperature
  • 1/3 cup vegetable oil
  • 1 cup water

Gelatin Layer

  • 1 package strawberry gelatin
  • 1 cup boiling water
  • 1 cup cold water

Topping

  • 1 cup whipped topping
  • 1 cup fresh strawberries, sliced Opt for fresh for better flavor

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a mixing bowl, combine the cake mix, eggs, vegetable oil, and water. Mix until well combined and the batter is smooth, about 2-3 minutes.
  • Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.

Gelatin Preparation

  • In a separate bowl, dissolve the strawberry gelatin in 1 cup of boiling water.
  • After it’s fully dissolved, stir in 1 cup of cold water.

Assembly

  • Poke holes in the top of the cooled cake with a fork, approximately 1 inch apart.
  • Pour the gelatin mixture over the cake and refrigerate for at least 4 hours or overnight.
  • Spread the whipped topping over the cake and garnish with sliced strawberries before serving.

Notes

Serve chilled. For extra decoration, add mint leaves as a garnish. Store leftovers in an airtight container in the refrigerator for 3-5 days.
