  • 1 piece French baguette, sliced into ½-inch thick rounds
  • 1 tablespoon olive oil To brush on baguette slices
  • 1 cup ricotta cheese (whole milk preferred)
  • 1 cup fresh strawberries, chopped
  • 1 tablespoon honey (optional) For sweetness

Preparation

  • Preheat your oven to 400°F (200°C).
  • Arrange baguette slices on a baking sheet, ensuring they do not overlap. Brush each slice generously with olive oil.

Toasting

  • Bake for 6–8 minutes, or until golden brown and crisp. Keep an eye on them due to varying oven temperatures.
  • Allow the toasted baguette slices to cool slightly on the baking sheet.

Preparing the Topping

  • In a small bowl, combine the ricotta cheese with salt, pepper, and optional honey. Stir until smooth and creamy.
  • Wash and chop the strawberries into small, even pieces.

Assembling

  • Spread the ricotta mixture generously onto each toasted baguette slice.
  • Spoon the chopped strawberries on top of each slice, ensuring even distribution.
  • Drizzle with balsamic glaze and top with finely sliced basil. Serve immediately.

Notes

For best results, keep ingredients chilled until just before serving, and serve warm or at room temperature. This appetizer pairs well with Prosecco or light white wine.
