  • 2 teaspoons Lemon Juice Use fresh lemon juice for better flavor.
  • 1 teaspoon Cornstarch Optional, for thickening the sauce.

Preparation

  • Begin by mixing the cut strawberries, 1 tablespoon lemon juice, and ⅓ cup sugar in a medium pot.
  • Place the pot over medium heat and bring the mixture to a boil. Stir regularly to prevent sticking.
  • Once boiling, reduce the heat to a simmer. Whisk occasionally and let the sauce cook until it thickens, which should take about 20 to 23 minutes.
  • After the sauce has thickened, turn off the heat and let it cool to room temperature.
  • Remember that the sauce will thicken slightly as it cools and even more when placed in the fridge.

Notes

You can serve this sauce over pancakes, waffles, yogurt, ice cream, cake, or cheesecake. To store, let it cool completely before transferring to an airtight container and refrigerating for up to one week. For longer storage, freeze in an ice cube tray for easy portioning. For a smoother sauce, blend the mixture after cooking. Try adding different fruits for variations.
