For the crust

  • 1 3/4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 3 tablespoons packed light brown sugar
  • 3/4 cup salted butter, melted
  • 1 teaspoon pure vanilla extract

For the filling

  • 3 cups chopped fresh strawberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon all-purpose flour

For the glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon light or heavy whipping cream
  • 1/4 teaspoon pure vanilla extract

Preparation

  • Preheat the oven to 350°F and line an 8x8-inch baking pan with parchment paper.
  • For the crust and crumb, mix the flour, both sugars, and salt in a bowl.
  • Add melted butter and vanilla, then stir until combined.
  • Crumble two-thirds of the mixture into the pan and bake for 15-20 minutes.

Filling

  • In another bowl, mix strawberries, granulated sugar, and flour.
  • Spoon the strawberry mixture over the cooled crust.
  • Crumble the remaining crust mixture on top and bake for 30-35 minutes until golden.

Glaze

  • Whisk together the powdered sugar, cream, and vanilla.
  • Drizzle the glaze over the cooled bars, slice, and serve.

Notes

These bars are best served chilled or at room temperature. Enjoy with whipped cream for extra richness. Store in an airtight container for 2-3 days at room temperature or refrigerate for up to a week. Let bars cool completely before drizzling glaze for a better presentation. You can substitute fresh strawberries with other fruits like blueberries or raspberries for a twist.
