  • 1/2 cup Chili-lime dressing Store-bought or homemade.

Preparation

  • Cook the pasta according to package instructions, then drain and set aside.

Mixing

  • In a large bowl, combine the roasted corn, cooked pasta, cotija cheese, lime juice, and chopped jalapeño.

  • Season with salt and pepper to taste.

Chill

  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve Street Corn Pasta Salad as a side dish or a main dish. For added flavor and presentation, garnish with extra lime wedges or fresh cilantro. Leftovers can be stored in an airtight container and will stay fresh in the refrigerator for about 3 days. Stir before serving again as the dressing may settle.
