  • 1 cup rice White rice recommended, but brown rice can be used.
  • 1 can diced tomatoes Preferably with no added salt.
  • 2 cups bell peppers, chopped Use a mix of colors for visual appeal.
  • 1 medium onion, chopped Yellow or white onion works well.
  • 2 cups chicken broth Low-sodium broth is a healthier option.
  • to taste Salt and pepper Adjust seasoning as preferred.

  • In a skillet over medium heat, cook the Italian sausage until browned, about 5-7 minutes. Stir occasionally to break up the sausage into small pieces.
  • Add the chopped onion and bell peppers, then sauté until softened, about 3-5 minutes.
  • Stir in the rice and cook for an additional 1-2 minutes.
  • Add the diced tomatoes and chicken broth, seasoning with salt and pepper. Bring the mixture to a boil.
  • Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is fully cooked and has absorbed the liquid.
  • Serve hot, and enjoy your hearty casserole!

Notes

For best flavor, serve with freshly chopped parsley or a sprinkle of cheese on top. This casserole also pairs well with a simple side salad or crusty bread.
