Ingredients
  

For the Crust

  • 1.5 cups sugar cookie dough Use soft and pliable dough, store-bought or homemade.

For the Cheesecake Filling

  • 16 oz cream cheese, softened Let sit out to reach room temperature.
  • 1 cup powdered sugar Sift before using to avoid lumps.
  • 1 teaspoon vanilla extract Adds depth to the flavor.
  • 2 cups whipped cream Use stabilized whipped cream.
  • 0.5 teaspoon almond extract Enhances the sweetness.
  • Chocolate chips or sprinkles for topping Optional, for decoration.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Press the sugar cookie dough into a 9-inch springform pan and bake for 10-12 minutes, until golden brown. Let it cool completely.
  • In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  • Gently fold in the whipped cream and almond extract until well blended.
  • Pour the cheesecake mixture over the cooled sugar cookie crust and smooth the top.
  • Refrigerate for at least 4 hours or until set.

Serving

  • Serve chilled, topped with chocolate chips or sprinkles if desired.

Notes

Chill overnight for a more intense flavor. Leftovers can be crumbled over berries or blended into a milkshake. Wrap tightly to freeze for up to a month.
