  • 3 pieces Chicken breasts (approximately 1 1/2 to 2 pounds), large Ensure chicken is at room temperature before baking.
  • 1 bunch Basil (fresh) Consider buying a small plant for fresh supply.
  • 2 cloves Garlic (minced)
  • 1 tsp Oregano (dried)
  • 1/2 cup Sun-dried tomatoes (chopped) Hydrate in warm water for juiciness if desired.
  • 3/4 cup Chicken broth Ensure it's gluten-free if needed.
  • 1 to taste Pepper Season to personal preference.

Preparation and Baking

  • Preheat the oven to 375°F (190°C).
  • In a baking dish, place the chicken breasts and season them liberally with salt, pepper, the dried oregano, and minced garlic. Rub the seasoning onto each piece for maximum flavor.
  • Scatter the chopped sun-dried tomatoes and fresh basil over the chicken breasts.
  • Pour the chicken broth into the dish around the chicken.
  • Cover the dish with aluminum foil and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove the foil and bake for an additional 5-10 minutes to brown the chicken.
  • Serve hot, garnished with additional basil if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months.
