  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced Use ripe avocados for best flavor.
  • 1 cup yellow bell pepper, diced
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced Adjust quantity to taste.
  • 1/4 cup sunflower seeds For added crunch.

Dressing

  • 3 tablespoons olive oil Use high-quality extra virgin olive oil.
  • 2 tablespoons lemon juice Freshly squeezed for the best flavor.
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • In a large bowl, combine the mixed greens, halved cherry tomatoes, diced avocado, diced yellow bell pepper, diced cucumber, and thinly sliced red onion.
  • Drizzle the salad liberally with olive oil and fresh lemon juice.
  • Gently toss all the ingredients together, being careful not to mash the avocado.
  • Season the salad with salt and pepper to taste.
  • Finish off with a sprinkle of sunflower seeds on top before serving.

Notes

Best enjoyed chilled or at room temperature. Pair with grilled chicken or fish for a hearty meal or serve alongside crusty bread. Store leftovers in an airtight container in the fridge for up to 2-3 days.
