Ingredients
  

For the Cupcake Base

  • 140 ml Buttermilk See notes for buttermilk substitution
  • 120 g Soft unsalted butter
  • 150 g Granulated sugar
  • 2 pieces Eggs
  • 1 tbsp Vanilla extract
  • 160 g All-purpose flour
  • 20 g Corn starch
  • 1 tsp Baking powder
  • 0.5 tsp Baking soda
  • 1 pinch Salt

For the Frosting

  • 160 g Cream cheese Room temperature for one hour
  • 100 g Soft unsalted butter For frosting
  • 300 g Icing sugar
  • 1 tsp Vanilla extract For frosting
  • Yellow and orange food coloring

Instructions
 

Cupcakes

  • Preheat your oven to 180°C (350°F) and line a cupcake tray with paper liners.
  • In a mixing bowl, whisk together the buttermilk, soft butter, granulated sugar, eggs, and vanilla extract until smooth.
  • In another bowl, combine the all-purpose flour, corn starch, baking powder, baking soda, and salt. Slowly add this dry mixture to the wet ingredients and mix until just combined.
  • Fill each cupcake liner with batter, about ¾ full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cupcakes to cool completely on a wire rack.

Decoration

  • For the frosting, beat the cream cheese and butter until creamy.
  • Gradually add the icing sugar and mix until combined. Then, add the vanilla extract and mix until the frosting is smooth.
  • Divide the frosting into separate bowls. Add yellow food coloring to one bowl and orange to another. Mix well until you achieve your desired colors.
  • Using a piping bag, swirl the yellow frosting on the cooled cupcakes. Then, use the orange frosting to create petals for the daisies on top. You can also use a round tip to add little dots in the center of the daisies.

Notes

Make sure to use room temperature ingredients for better mixing. Don’t overmix the batter; mix just until combined. Use a piping bag with different nozzles to create more designs and patterns with your frosting.
