  • 2 lbs ground beef (80/20 preferred for juiciness)
  • 1 cup shredded Swiss cheese
  • 1 cup cooked bacon, chopped
  • 1 cup mushrooms, sliced and sautéed
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Preparation

  • Preheat the oven to 375°F (190°C). Line a baking sheet with foil or use a loaf pan.
  • Cook the bacon until crispy. Remove it from the pan and set aside.
  • Sauté the mushrooms in the bacon fat until they are browned.
  • In a large bowl, combine ground beef, eggs, breadcrumbs, onion, garlic, Worcestershire sauce, salt, and pepper.
  • Gently mix in half of the shredded Swiss cheese.
  • Shape the mixture into a loaf on the prepared baking sheet. Press the rest of the cheese, mushrooms, and bacon on top.

Cooking

  • Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let it rest for 10 minutes before slicing. Garnish with parsley and serve.

Notes

For added flavor, consider adding herbs like thyme or oregano to the meat mixture. Make sure not to overmix the ingredients to keep the meatloaf tender. Ensure the mushrooms are well cooked to avoid excess moisture in the loaf.
