Ingredients
  

For the Filling

  • 1 pound ground beef
  • 1 can refried beans Warmed over low heat
  • 1 cup Mexican rice (cooked)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup Fritos corn chips Added just before rolling the burrito to maintain crunch
  • 1 packet taco seasoning
  • 4 large flour tortillas
  • Sour cream (optional)
  • Salsa (optional)

Instructions
 

Preparation

  • Heat a skillet over medium heat. Add ground beef and cook for 5-7 minutes, stirring occasionally, until browned. Drain excess fat from the skillet.
  • Sprinkle in the taco seasoning and follow the package instructions for preparation, usually adding a bit of water and simmering for an additional 2-3 minutes.
  • In a separate saucepan, warm up the refried beans over low heat, stirring occasionally for about 5 minutes until heated through.

Assembly

  • On each tortilla, spread a layer of refried beans (about 2 tablespoons).
  • Top with a scoop of the seasoned beef, a generous amount of Mexican rice, a handful of Fritos, and a sprinkle of shredded cheese.
  • Carefully roll the tortillas starting from one side, folding in the edges to keep the filling contained.
  • Place the burritos seam-side down in a lightly greased baking dish.

Baking

  • Preheat your oven to 350°F (175°C) while the burritos rest.
  • Once preheated, bake the burritos for 15-20 minutes or until heated through and the cheese is melted.

Serving

  • Serve warm, garnished with sour cream and salsa if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months. Reheat in the oven or microwave.
