Ingredients

  • 8 oz pasta shells
  • 1 lb ground beef
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 1 cup cheese (cheddar or Mexican blend)
  • 1 cup water
  • Salt and pepper to taste
  • Chopped green onions (optional for garnish)

Cooking

  • In a large pot, brown the ground beef over medium heat for about 5-7 minutes, stirring occasionally.
  • Season the cooked beef with salt and pepper.
  • Drain any excess fat from the pot.
  • Add the taco seasoning and diced tomatoes to the pot, then mix well and let it simmer for a minute or two.
  • Stir in the pasta shells and pour in the water. Bring to a boil, then reduce heat to low, cover, and let simmer for 10-12 minutes until pasta is al dente.
  • Remove pot from heat and stir in the cheese until melted.
  • Garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to four days. Can be frozen for up to three months.
