Rice Base

  • 1 cup uncooked white rice Feel free to use brown rice for a healthier twist.
  • 2 cups water or chicken broth Chicken broth adds deeper flavor.

Main Ingredients

  • 1 lb ground beef or turkey Use turkey for a lighter option.
  • 1 packet taco seasoning (About 1 oz.) This is the magic dust!
  • 1 can black beans (15 oz, drained and rinsed) Adds protein and creamy texture.
  • 1 cup corn (Frozen or canned) A burst of sweetness.
  • 1 cup diced tomatoes (Fresh or canned) Brings freshness to each bite.
  • 1 cup shredded lettuce Adds a crunchy layer.
  • 1 cup shredded cheddar cheese Melts perfectly into the warm bowl.
  • ½ cup salsa (For topping) Choose your favorite kind!
  • 2 tablespoons olive oil Brings richness to the dish.
  • To taste salt and pepper Essential for balancing flavors.
  • Optional fresh cilantro and lime wedges (For garnish) Brighten up the dish and add zing!

Instructions
 

Cook the Rice

  • In a medium pot, combine the uncooked rice and water or chicken broth. Bring it to a boil, then reduce the heat and cover. Let it simmer for about 18 minutes until the liquid is absorbed and the rice is fluffy.

Brown the Meat

  • While the rice cooks, heat the olive oil in a large skillet over medium-high heat. Add the ground beef or turkey, breaking it up as it browns. Cook until it’s nicely browned and no longer pink—around 5–7 minutes.

Add the Seasonings

  • Once your meat is cooked, sprinkle in the taco seasoning. Stir everything together, allowing the spices to meld into the meat for another 2–3 minutes.

Mix in the Goodies

  • Stir in the black beans, corn, and diced tomatoes. Let everything simmer together on low for about 5 minutes.

Assemble Your Rice Bowl

  • Once your rice is ready, fluff it with a fork and get ready to assemble. Start with a generous scoop of rice in your bowl, layer on the meat mixture, and then add shredded lettuce and cheese. Top it off with salsa, a sprinkle of cilantro, and a squeeze of lime.

Notes

Rinse your rice to remove excess starch. Taste and adjust seasoning as desired. Store leftovers in the fridge for up to 3 days. Freezes well for up to 3 months.
