  • 1 pound ground beef or chicken Feel free to experiment with turkey or tofu.
  • 1 can black beans Rinsed and drained.
  • 1 cup corn Can use frozen or canned corn.
  • 1 cup diced tomatoes
  • 1 packet taco seasoning Choose mild seasoning for less heat.
  • 1 cup shredded cheese
  • 1 whole avocado, sliced
  • to taste Sour cream (optional) For extra creaminess.
  • to taste Chopped cilantro (optional) For garnish.

Cooking

  • In a skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat.
  • Stir in taco seasoning, black beans, corn, and diced tomatoes. Cook until heated through.
  • In bowls, layer cooked rice, the meat mixture, cheese, avocado, and any additional toppings you desire.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave when ready to eat. Experiment with adding bell peppers or onions for extra flavor.
