  • 1/4 cup red onion, diced

Dressing

  • 1 tablespoon olive oil
  • 1 teaspoon chili powder Add more for a spicier dish.
  • 1 each lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish Use to enhance flavor.

Preparation

  • In a large bowl, combine the cooked rice, chicken, corn, cherry tomatoes, avocado, and red onion.
  • In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
  • Pour the dressing over the chicken mixture and gently toss to combine.
  • Serve the bowl garnished with fresh cilantro.

Notes

This dish is versatile and can be served warm or cold. Store leftovers in an airtight container in the refrigerator for up to three days. Freeze components separately for later use, but note that avocado may not freeze well. Consider substituting chicken with black beans or chickpeas for a vegetarian version and adding grilled zucchini or bell peppers.
