  • 24 oz Tater tots Cook according to package instructions.
  • 4 large Eggs Scrambled separately.
  • 1 cup Cheddar cheese, shredded To top the bowl.
  • 16 oz Beef sausage Browned and crumbled.
  • 2 cups Milk For the gravy.
  • 2 tbsp Flour To make the roux.
  • 1 tsp Salt To taste.
  • 1 tsp Black pepper To taste.

  • Cook the tater tots according to package instructions until crispy, about 20-25 minutes at 425°F.
  • In a skillet, brown the beef sausage over medium heat for 5-7 minutes, breaking it into small pieces until no pink remains.
  • Remove the sausage from the skillet, leaving the drippings in the pan.
  • Add 2 tablespoons of flour to the remaining fat in the skillet to make a roux, cooking for about 1 minute.
  • Gradually whisk in the milk, breaking up any lumps, and continue cooking until the gravy thickens, about 3-5 minutes. Season with salt and pepper.
  • Scramble the eggs in a separate pan over medium heat for 3-5 minutes until fluffy and creamy.
  • Assemble the bowl by layering the crispy tater tots, followed by scrambled eggs and browned sausage. Pour the gravy over the top.
  • Sprinkle with shredded cheddar cheese and serve warm.

Notes

Tip: Use colorful bowls for presentation, and consider serving with fresh fruit or a salad. Garnish with chopped green onions or parsley.
