Main Ingredients

  • 8 pieces 8 eggs
  • 1 pound 1 pound pork sausage (Jimmy Dean) Can substitute with turkey or vegetarian sausage.
  • 1.5 cups 1 1/2 cups whole milk or heavy cream Use heavy cream for richness.
  • 24 oz. 24 oz. frozen tater tots Frozen tater tots work best.
  • 2 cups 2 cups cheddar cheese Feel free to mix different cheeses.

Spices

  • 1.5 tsp 1 1/2 tsp salt
  • 1 tsp 1 tsp black pepper
  • 0.25 tsp 1/4 tsp garlic powder

Instructions
 

Preparation

  • Preheat the oven to 375°F and spray a 9 x 13 pan with non-stick cooking spray.
  • Brown the sausage meat in a skillet over medium heat, breaking it into small pieces. Drain the excess grease and set aside.
  • In a bowl, whisk together the eggs, heavy cream (or whole milk), and all spices.

Assembly

  • Layer the bottom of the dish with frozen tater tots.
  • Add the cooked sausage on top, followed by the cheddar cheese.
  • Pour the whisked egg mixture over everything.

Baking

  • Cover the casserole dish with foil and bake for 40 minutes.
  • Remove the foil and continue baking for another 15-20 minutes until the egg is fully cooked. Check at the 40-45 minute mark.

Serving

  • Serve hot with sour cream, tomatoes, salsa, or crunchy bacon.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm in the oven or microwave.
