Preparation

  • In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  • Add the chopped onion and minced garlic to the pot. Cook until softened, about 5 minutes.
  • Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another minute until fragrant.
  • Pour in the diced tomatoes, beef broth, and kidney beans if using. Stir well.
  • Bring to a boil, then reduce the heat and let it simmer for at least 30 minutes.
  • Scoop into bowls and top with shredded cheese, sour cream, and green onions if desired.

Notes

Use fresh spices for vibrant flavor. Simmer longer for deeper flavors. Taste as you go for spice levels. This chili can be made in advance and stored in the fridge for 3-5 days or frozen after cooling.
