  • 8 slices sliced turkey
  • 4 slices bacon
  • 2 cups fresh spinach a handful
  • 4 slices cheddar cheese generous slices
  • 4 slices bread your choice
  • 2 tablespoons butter for spreading on the bread
  • to taste salt
  • to taste pepper

  • Preheat a skillet over medium heat for about 2-3 minutes.
  • Cook the bacon in the skillet until crispy, roughly 5-7 minutes. Remove and set aside on a paper towel to absorb excess grease.
  • In the same skillet, add a handful of fresh spinach and sauté until wilted, about 2-3 minutes, stirring occasionally.
  • Assemble the sandwich by layering sliced turkey, crumbled bacon, sautéed spinach, and cheddar cheese between two slices of bread.
  • Butter the outside of the sandwich generously. Place it in the preheated skillet.
  • Cook until the bread is golden brown and the cheese is melted, flipping once, about 3-4 minutes per side.
  • Slice in half and serve warm.

Notes

To save time, prep the bacon and spinach ahead of time. Use whole-grain or sourdough bread for richer flavor. Avoid overcrowding the pan when sautéing spinach. For meal prep, consider making a double batch.
