  • 4 slices Bacon Cook until crispy.
  • 2 cups Fresh spinach Wash thoroughly before use.
  • 1 cup Cheddar cheese, shredded Or substitute with gouda or Swiss.
  • 4 slices Sourdough or ciabatta bread Can use gluten-free bread if needed.
  • 2 tablespoons Butter For toasting the bread.

Preparation

  • Preheat a skillet over medium heat.
  • Cook the bacon until crispy, about 7-10 minutes. Use tongs to turn for even cooking, then remove and drain on paper towels.
  • In the same skillet, toast the bread slices with butter until golden brown, about 2-3 minutes per side.

Assembly and Cooking

  • Layer turkey, cooked bacon, fresh spinach, and cheddar on one slice of toasted bread. Top with another slice.
  • Cook the sandwich in the skillet until cheese melts and bread is golden brown, about 3-5 minutes per side.
  • Slice and serve warm, optionally with a light salad or crunchy pickles.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Thaw and reheat before serving.
