  • 3 ripe bananas, mashed Use very ripe bananas for sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar Can reduce sugar if desired.
  • 1 large egg, beaten Can be replaced with applesauce or flaxseed for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can experiment with whole wheat flour for a healthier option.
  • 1/2 cup walnuts, chopped (optional) Can replace with pecans or omit.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  • In a mixing bowl, mix the mashed ripe bananas with melted butter until combined.
  • Stir in the baking soda and salt.
  • Mix in the sugar, beaten egg, and vanilla extract.
  • Finally, add the flour and stir until just incorporated. Fold in walnuts if using.
  • Pour the batter into the greased loaf pan.

Baking

  • Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  • Let it cool before removing from the pan.

Notes

Serve warm or at room temperature. Delicious on its own or spread with butter or peanut butter. Can store at room temperature for up to 3 days or freeze for 2-3 months.
