Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

For Frying

  • Vegetable oil for frying
  • Powdered sugar for dusting

Preparation

  • In a large bowl, mix the flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  • Combine the wet ingredients with the dry ingredients and stir until a dough forms.
  • Turn the dough out onto a floured surface and knead gently until smooth.
  • Roll out the dough to about 1/2 inch thick and cut into squares or circles.

Frying

  • Heat oil in a deep fryer or heavy pot to 350°F (175°C).
  • Fry the beignets in batches until golden brown, about 2-3 minutes per side.
  • Drain on paper towels and dust with powdered sugar before serving.

Notes

Serve warm, dusted with powdered sugar. They pair well with coffee or hot chocolate. For storage, keep in an airtight container at room temperature for up to 2 days, or freeze for up to a month. Reheat in a toaster oven for best results.
