  • 1 head cauliflower, chopped into florets
  • 1 cup smoky BBQ sauce
  • 8 small corn tortillas
  • 1 whole avocado, sliced
  • 1 cup shredded cabbage
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 425°F (220°C).
  • Toss the cauliflower florets with the smoky BBQ sauce, salt, and pepper.
  • Spread the coated cauliflower on a baking sheet and roast for 25-30 minutes, or until tender and slightly charred.
  • While the cauliflower is roasting, warm the corn tortillas in a skillet or microwave.
  • Assemble the tacos by placing roasted cauliflower on each tortilla, topping with avocado slices, shredded cabbage, and chopped cilantro.
  • Serve with lime wedges on the side.

Notes

Serve these tacos warm for the best taste. You can offer lime wedges on the side for an extra burst of flavor. They are perfect for casual gatherings or family dinners. To store, keep leftover cauliflower in an airtight container in the fridge for up to 3 days. Assemble tacos just before serving for freshness.
