  • 2 tablespoons vegetable oil For sautéing.
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (or mushroom sauce for vegetarian) Vegetarian alternative.
  • 1 teaspoon sesame oil
  • to taste green onions, for garnish Add just before serving.

Preparation

  • Cook the lo mein noodles according to package instructions, typically around 3-5 minutes, then drain and set aside.
  • In a large skillet or wok, heat vegetable oil over medium-high heat (about 375°F).
  • Add minced garlic and sauté for about 30 seconds until fragrant, stirring continuously to prevent burning.
  • Toss in sliced bell peppers, julienned carrots, and broccoli florets. Cook for about 5-7 minutes, stirring occasionally until vegetables are just tender yet crisp.
  • Stir in the cooked lo mein noodles, soy sauce, oyster sauce (or its vegetarian replacement), and sesame oil.
  • Toss gently to combine and heat through for an additional 2-3 minutes, allowing the sauce to coat the noodles.
  • Garnish with chopped green onions before serving hot.

Notes

Serve fresh and hot. Pairs well with spring rolls or a light soup. Store leftovers in an airtight container in the refrigerator for up to three days. For meal prep, consider separating crunchy vegetables before storing.
