Ingredients
  

Vegetables and Broth

  • 4 cups vegetable broth
  • 1 cup peas
  • 1 carrot diced
  • 1 stalk celery, diced
  • 1 spring onion chopped
  • 2 cloves garlic, minced

Pasta and Seasoning

  • 1 cup tiny pasta Use according to package instructions for cooking time
  • 1 teaspoon thyme
  • to taste Salt and pepper
  • 1 tablespoon olive oil For sautéing

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add spring onion, carrot, and celery. Sauté until softened, about 5 minutes.
  • Stir in garlic and thyme, cooking for another minute until fragrant.

Cooking

  • Add vegetable broth and bring to a boil.
  • Stir in peas and tiny pasta, cooking according to pasta package instructions until al dente.
  • Season with salt and pepper to taste.

Serving

  • Serve warm and enjoy your cozy winter soup.

Notes

Use fresh vegetables for the best flavor. Feel free to add other veggies like spinach or bell peppers for variety. If you prefer a thicker soup, blend a portion of it and mix it back in. Store leftovers in an airtight container for up to three days, or freeze for up to three months.
