  • 1 medium green cabbage, shredded
  • 1 cup shredded carrots

Dressing

  • 1/2 cup apple cider vinegar Can substitute with lemon juice or white wine vinegar.
  • 1/4 cup sugar or sweetener of choice Adjust to taste.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Dijon mustard (optional) For added flavor.

Preparation

  • In a large bowl, combine the shredded cabbage and shredded carrots. Toss them lightly to mix.
  • In a separate bowl, whisk together the apple cider vinegar, sugar, salt, black pepper, and Dijon mustard if using. Ensure the sugar is completely dissolved in the mixture for a smooth dressing.

Mixing

  • Pour the dressing over the cabbage and carrots. Toss everything together thoroughly until the vegetables are well coated.

Chill

  • Let the coleslaw sit for at least 30 minutes in the refrigerator before serving to allow the flavors to meld.

Notes

Vinegar coleslaw is best enjoyed chilled and pairs well with grilled meats, sandwiches, and fish dishes. For a presentation twist, serve in colorful lettuce cups.
