Ingredients

Salad Ingredients

  • 5 cups fresh watermelon (cut into bite-size chunks) Look for seedless watermelon for convenience.
  • 2 cups cucumber (roughly chopped) Persian or English cucumbers work wonderfully as they have thinner skin and fewer seeds.
  • 1/4 cup fresh mint (roughly chopped) Fresh herbs are key; don't substitute dried herbs here for the best flavor.
  • 1/4 cup fresh basil (roughly chopped)
  • 4-6 ounces feta cheese For a creamier texture, opt for a block of feta rather than pre-crumbled.
  • 2 tablespoons champagne vinegar
  • 2-3 tablespoons extra virgin olive oil Start with 2 tablespoons and adjust based on your taste preference.
  • kosher salt (to taste)
  • black pepper (to taste)

Instructions

Preparation

  • Start by cutting the watermelon into bite-sized chunks and roughly chopping the cucumber, mint, and basil. Carefully add all these fresh ingredients into a large salad bowl.

Incorporation

  • Break apart the feta cheese into small pieces using your fingers or a knife, then add it to the salad bowl. Gently toss to combine.

Dressing

  • Drizzle the champagne vinegar and olive oil over the salad. Mix well using a spoon or your hands until everything is evenly coated.

Serving

  • Taste the salad and season with kosher salt and black pepper as needed. Stir again, and it’s ready to be enjoyed!

Notes

This salad is best enjoyed chilled and can be garnished with extra fresh herbs or feta. It pairs well with grilled chicken, fish, or as part of a buffet spread.
