  • 1 cup dill pickles, chopped Can substitute with sweet pickles if preferred.
  • 2 tablespoons Tajín seasoning Adjust according to taste.

Preparation

  • Cut the watermelon in half lengthwise and scoop out the flesh, leaving a ¼ inch border to form cups.
  • Chop the watermelon flesh into bite-sized pieces and set aside in a mixing bowl.
  • In a separate bowl, combine the chopped watermelon, dill pickles, and Tajín seasoning. Stir gently.
  • Spoon the mixture back into the hollowed-out watermelon cups, filling generously.
  • Garnish with fresh mint leaves if desired.

Serving

  • Serve immediately and enjoy chilled.

Notes

Refrigerate the cups for at least 30 minutes before serving for enhanced refreshment. Use leftover filling for toppings on tacos or grilled fish.
