Preparation

  • In a large pot, heat a small amount of oil over medium heat. Add the chopped onions and minced garlic. Cook until softened, about 3-5 minutes.
  • Toss in the sliced carrots, celery, and chopped green bell pepper. Let them cook for another 2-3 minutes.
  • Stir in the chopped cabbage and cook until it starts to soften, about 5 minutes.

Cooking

  • Pour in the broth and add the canned diced tomatoes along with the Italian seasoning. Stir everything together.
  • Bring the mixture to a boil, then reduce the heat to let it simmer gently for about 30 minutes.
  • Once it’s cooked, season with salt, pepper, and a splash of hot sauce if desired.
  • Ladle the soup into warm bowls and serve hot.
