  • 2 cups cooked, shredded chicken You can use rotisserie chicken for convenience.
  • 1 can white beans (such as Great Northern) Any type of white beans can be used.
  • 1 can diced green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup corn (optional) Adds a nice sweetness.
  • Sour cream and cilantro for serving For garnishing.

Preparation

  • In a large pot, sauté the diced onion and minced garlic until fragrant.

Cooking

  • Add the shredded chicken, white beans, green chilies, corn (if using), chicken broth, cumin, chili powder, salt, and pepper.
  • Bring to a boil, then reduce the heat and let simmer for about 20-30 minutes.
  • Adjust seasoning to taste.

Serving

  • Serve hot, topped with sour cream and cilantro. You can also add tortilla chips on the side.

Notes

For extra flavor, consider adding some lime juice or zest at the end of cooking. If you want more heat, add diced jalapeños or cayenne pepper. Experiment with different beans or vegetables for added texture.
