Main Ingredients

  • 2 cups shredded chicken Use rotisserie chicken for convenience.
  • 1 can white beans (15 oz)
  • 1 can green chilies (10 oz) Adjust for spiciness.
  • 1 cup corn (fresh or frozen)
  • 1 package cream cheese (8 oz) Can substitute with Greek yogurt for a lighter version.
  • 4 cups chicken broth

Seasonings

  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Instructions
 

Cooking

  • In a large pot over medium heat, combine shredded chicken, white beans, green chilies, corn, and chicken broth.
  • Add cumin, onion powder, garlic powder, salt, and pepper. Stir well to combine.
  • Bring to a simmer and cook for about 15 minutes, stirring occasionally.
  • Add cream cheese and stir until melted and fully incorporated into the broth.
  • Serve hot, garnished with desired toppings such as cilantro or avocado.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months. Thaw in the fridge before reheating.
