Ingredients
  

Main Ingredients

  • 1 lb ground turkey or chicken You can use either ground turkey or chicken.
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • 1 cup corn (frozen or fresh)
  • to taste Salt and pepper

  • sour cream
  • shredded cheese
  • cilantro

Instructions
 

Preparation

  • In a large pot, cook the ground turkey or chicken over medium heat until browned.
  • Add the chopped onion and minced garlic, cooking until the onion is softened.
  • Stir in the cumin, chili powder, salt, and pepper.

Cooking

  • Add the white beans, diced green chilies, chicken broth, and corn.
  • Bring the mixture to a simmer and cook for 20-25 minutes.

Serving

  • Serve hot with your choice of toppings.

Notes

For a thicker chili, mash some of the white beans before adding them to the pot. Adjust heat by varying the amount of green chilies or adding cayenne pepper. Fresh herbs enhance the flavor.
