Ingredients
  

For the mousse

  • 1 cup white chocolate chips
  • 1 cup heavy cream Whipped until soft peaks form
  • 1/2 teaspoon vanilla extract

For the raspberry layer

  • 1 cup raspberry puree Fresh or thawed from frozen
  • 1 tablespoon sugar Optional, depending on the sweetness of raspberries
  • Fresh raspberries Fresh raspberries for garnish

For layering

  • Additional whipped cream Additional whipped cream for layering

Instructions
 

Preparation

  • Melt the white chocolate in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.
  • In a separate bowl, whip the heavy cream until soft peaks form.
  • Fold the melted white chocolate and vanilla extract gently into the whipped cream until combined.

Layering

  • In serving glasses, layer the white chocolate mousse, raspberry puree, and fresh raspberries.
  • Repeat the layers until the glasses are filled.
  • Top with additional whipped cream and fresh raspberries.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

For added flavor, garnish with a sprig of mint or chocolate shavings. Store leftovers covered in plastic wrap in the refrigerator for up to three days.
