  • 2 pounds potatoes Choose waxy potatoes like red or new potatoes.
  • 1 cup mayonnaise Can use vegan mayonnaise for a vegan option.
  • 1/2 cup blue cheese, crumbled Can substitute with goat cheese for a milder flavor.
  • 4 strips bacon, cooked and crumbled For a vegan option, use plant-based bacon.
  • 1/4 cup red onion, diced
  • 2 tablespoons fresh chives, chopped For garnish.
  • Salt and pepper to taste Optional for seasoning.

Preparation

  • Boil the potatoes until fork-tender and then let them cool.
  • Cut the cooled potatoes into bite-sized pieces and place them in a large bowl.
  • In a separate bowl, mix together the mayonnaise, blue cheese, salt, and pepper until smooth.
  • Pour the dressing over the potatoes and gently toss to combine.
  • Stir in the crumbled bacon, red onion, and chives.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve cold. Pairs well with grilled meats or sandwiches. Garnish with extra chives or blue cheese.
