Ingredients
  

Crust and Topping

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted

Cream Cheese Layer

  • 8 oz cream cheese, softened Ensure it's softened for a smooth mixture.
  • 1/2 cup granulated sugar
  • 1 ea egg
  • 1 teaspoon vanilla extract

Filling

  • 2 cups fresh blueberries Fresh blueberries preferred; can use frozen if thawed and drained.
  • 1 tablespoon lemon juice

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  • In a bowl, combine flour, oats, brown sugar, and melted butter. Press half of this mixture into the bottom of the prepared pan.
  • In another bowl, beat together the cream cheese, granulated sugar, egg, and vanilla extract until smooth.

Assembly

  • Spread the cream cheese mixture over the oat base.
  • Toss the blueberries with lemon juice and sprinkle them evenly on top of the cream cheese layer.
  • Crumble the remaining oat mixture over the blueberries.

Baking

  • Bake for 30-35 minutes or until the top is golden brown.
  • Allow to cool before slicing into bars.

Notes

You can serve these bars at room temperature. Enjoy them plain or topped with whipped cream or vanilla ice cream. To store, place them in an airtight container in the refrigerator for up to a week. For long-term storage, wrap tightly and freeze for up to three months.
