  • 1 pound Shrimp Use fresh or thawed frozen shrimp.
  • 2 cups Red cabbage Shredded.
  • 2 medium Avocados Diced.
  • 1 cup Mayo For the dressing.
  • 1/2 cup Greek yogurt For the dressing.
  • 3 tablespoons Lime juice Freshly squeezed.
  • 1/2 cup Cilantro Chopped for the dressing and garnish.
  • 8 pieces Taco shells Feel free to use soft tortillas or corn taco shells.

Instructions
 

Prep the Shrimp

  • Season the shrimp with salt, pepper, and lime juice.
  • Cook the shrimp in a skillet over medium heat until pink and cooked through, about 5-7 minutes.

Make the Dressing

  • In a separate bowl, mix mayo, Greek yogurt, lime juice, and chopped cilantro to make the dressing.

Assemble the Tacos

  • Place shrimp, sliced red cabbage, and diced avocados on the taco shells.
  • Drizzle the creamy dressing over the taco filling.
  • Serve immediately.

Notes

Serve these tacos with extra lime wedges, a light salad, or tortilla chips. For a spicy kick, add diced jalapeƱos to the taco filling or mix some hot sauce into the dressing. Store components separately in airtight containers for about a day.
