  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano

Preparation

  • In a large bowl, combine the diced cucumbers, tomatoes, thinly sliced red onion, diced bell peppers, pitted kalamata olives, and crumbled feta cheese.
  • In a separate bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  • Pour the dressing over the salad ingredients and toss gently to combine. This should take about 1-2 minutes.
  • Serve immediately, or for the best flavor, refrigerate for an hour to let the flavors meld together.

Notes

Store leftover Greek salad in an airtight container in the refrigerator for up to three days. The texture may become soggy but can be rejuvenated with fresh herbs and lemon juice.
