Cooking

  • In a medium saucepan, combine the sliced strawberries and sugar.
  • Cook over medium heat, stirring occasionally until the strawberries release their juices, about 5-7 minutes.
  • Add the lemon juice and vanilla extract, stirring to combine.
  • Cook for an additional 2-3 minutes until the sauce thickens slightly.
  • Remove from heat and let it cool.

Serving

  • Serve warm or chilled over cheesecake, pound cake, ice cream, or whipped cream.

Notes

To store, let it cool completely, then transfer to an airtight container and refrigerate for up to a week. For longer storage, freeze in small portions.
