  • 1.5 lbs sirloin steak, cut into bite-sized cubes Use grass-fed beef for richer flavor.
  • 1.5 lbs baby potatoes, halved or quartered Regular or sweet potatoes can be used.
  • 4 tablespoons olive oil Divided between cooking steps.
  • 4 tablespoons butter Add more for a richer sauce.
  • 5-6 cloves garlic, minced Use fresh garlic for the best flavor.
  • 1 teaspoon paprika Adjust according to spice preference.
  • 1 teaspoon dried Italian herbs Use fresh herbs for more flavor.
  • to taste Salt and black pepper Season generously.
  • for garnish Fresh parsley, chopped Sprinkle on top before serving.

Instructions
 

Cooking the Potatoes

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add the halved or quartered baby potatoes, seasoning with salt, pepper, and paprika.
  • Cook for about 15 minutes, stirring occasionally, until golden brown and fork-tender.
  • Remove the potatoes from the skillet and set aside.

Preparing the Steak

  • Season the sirloin steak cubes with salt, pepper, and dried Italian herbs.
  • In the same pan, add 1 tablespoon of olive oil and 2 tablespoons of butter.
  • Sear the steak cubes in a single layer for 2–3 minutes per side until browned, working in batches if necessary.

Adding Garlic and Combining

  • Reduce the heat to medium-low and add the remaining butter and minced garlic to the skillet.
  • Sauté the garlic until fragrant, about 1 minute.
  • Return the cooked potatoes to the pan and gently toss everything together.
  • Cook for an additional 1–2 minutes to heat through and meld the flavors.

Serving the Dish

  • Garnish with freshly chopped parsley and serve hot.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Consider cooking additional vegetables alongside for variation.
