  • 2 cups cooked ham, diced Use leftover ham if available.
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth Ensure it's gluten-free if needed.
  • 2 cups Great Northern beans, canned or cooked
  • 1 teaspoon thyme
  • 1 leaf bay leaf
  • Salt and pepper to taste

Preparation

  • In a large pot, sauté the onion, carrots, celery, and garlic until softened.
  • Add the diced ham and cook for a few minutes.
  • Stir in the chicken broth, Great Northern beans, thyme, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and let simmer for 30-45 minutes.
  • Remove the bay leaf before serving.

Notes

Serve hot in bowls, garnished with fresh herbs or with crusty bread. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
