For the Cake

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cups mascarpone cheese
  • 0.5 cups Limoncello liqueur
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the mascarpone cheese, Limoncello, lemon zest, and vanilla extract until just combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Divide the batter evenly between the prepared cake pans.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.

Frosting and Serving

  • Once cooled, layer the cakes with a mascarpone frosting made from mascarpone, Limoncello, and powdered sugar.
  • Dust the top with powdered sugar and garnish with fresh berries before serving.

Notes

For a non-alcoholic version, consider using lemon juice and extra sugar. Using room temperature ingredients ensures a smoother batter.
