Ingredients
  

Main Ingredients

  • 1 pound ground beef or turkey Use ground turkey for a leaner option.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium bell peppers, chopped Any color of bell pepper works.
  • 1 can diced tomatoes Avoid those with added sugars.
  • 1 cup cooked rice or quinoa Use brown rice or quinoa for extra fiber.

Spices and Seasoning

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper

Optional Toppings

  • to taste Shredded cheese Optional for serving.

Instructions
 

Cooking the Meat

  • In a large skillet over medium heat, brown the ground beef or turkey until fully cooked, about 5-7 minutes. Drain any excess fat.

Sautéing Vegetables

  • Add the diced onion and minced garlic to the skillet and sauté for about 2-3 minutes, until the onion becomes translucent.
  • Stir in the chopped bell peppers, diced tomatoes, cooked rice or quinoa, chili powder, cumin, salt, and pepper.
  • Cook for an additional 5-7 minutes, stirring occasionally until the bell peppers are tender.

Serving

  • Remove from heat and, if desired, sprinkle shredded cheese on top before serving warm.

Notes

Best enjoyed warm. Store leftovers in an airtight container for up to 4 days. This recipe can be customized with different meats or made vegetarian.
