  • 2 cups yucca Peeled and cut into chunks
  • 1/2 cup mayonnaise Can use homemade for better flavor
  • 1/4 cup green onions, chopped
  • 1/2 cup bell pepper, diced
  • 1 tablespoon olive oil

Seasoning

  • Salt to taste
  • Pepper to taste

Preparation

  • Peel and cut the yucca into chunks.
  • Boil in salted water until tender.
  • Drain and cool the yucca, then cut into cubes.

Mixing

  • In a large bowl, combine the yucca, chopped green onions, diced bell pepper, mayonnaise, and olive oil.
  • Season with salt and pepper to taste.
  • Mix well and serve chilled.

Notes

Yucca salad is best served cold. Serve it as a side dish alongside grilled meats or fish, or enjoy it as a light lunch. You can add fresh herbs or a sprinkle of paprika for extra flavor. To store leftovers, place them in an airtight container in the refrigerator for 2-3 days, stirring well before serving again.
